The categories menu style can be changed through the Fancy Categories options page. To access this page select General settings in the Administration menu, then click on the item Fancy Categories options in the section menu.
Select a categories menu style you would like to use in your store by choosing Candy Menu, Explorer or Icons Menu from the drop-down list, then set the options pertaining to this menu style.
